Serves one person
7 oz chicken, cubed

1 cup zucchini, julienned

1⁄2 cup bell peppers, sliced

1⁄2 cup tomato coulis
1 garlic clove, minced

1 tsp basil, chopped

1⁄4 tsp grapeseed oil

Sea salt & pepper to taste 

Cooking Directions:
In a hot non-stick pan with grapeseed oil, add chicken; let sear. 
Add bell peppers and garlic to your pan.

When the chicken is almost cooked, add in the zucchini.

When everything is ready, place chicken, vegetables and basil over a bed of tomato coulis.
